I love trying new recipes! This recipe received good reviews so I thought it was worth giving it a try and I was right. Just like the Crustless Quiche recipe I posted last week, this one is very versatile and can be used as a great appetizer, or alongside eggs with your breakfast or as a little extra protein with just about anything. The other thing I like about these is that you can make them ahead of time and use as needed! You might want to put this one in your files for holiday time as well.
I know there are many variations of sausage balls. These are really simple to make! I found it through the Trim Healthy Mama facebook group and the person posting it did not know where she had gotten it from.
Sausage Balls (S for those following Trim Healthy Mama)
- Mix together 2 cups almond flour with 3 tsp. baking powder and 1 tsp. salt
- Add in 1 TB melted butter and 1 egg
- Stir in 8 oz grated sharp cheddar cheese and 1 lb sausage
- Roll into balls
- Bake 20-25 mins at 375 degrees
I did learn something new about sausage. For some reason I did not think sweet italian sausage was a breakfast sausage. Turns out it is. I was at the meat counter walking back and forth looking for breakfast sausage. I found a butcher and asked her where I could find bulk breakfast sausage. She took me to the sweet italian sausage. I kindly said, “thank you but I was looking for a breakfast sausage.” She said sweet italian sausage is a breakfast sausage. I took her advice but frankly wasn’t sure that I still had the right thing. It worked perfect. Guess she (the butcher) knew what she was talking about!
