The last two Thursdays I have written reviews that were not desserts so I’m pretty confident you are ready for another great dessert! I try to keep a sugar substitute dessert around most of the time or else we find ourselves scrounging the pantry for a snack or dessert that is not sugar free!
This is another one of Carolyn’s desserts from her blog alldayidreamaboutfood. It is raspberry-cheesecake-swirl-brownies. It is not as difficult to make as you might think. Basically, you have two layers. A brownie layer and a cheesecake layer and you have a little fun swirling the two layers together, pop in the oven, bake, let cool, set in refrigerator and 2 hours later you have a nice summer dessert.
I did not have any raspberry liqueur or raspberry extract but I did have some raspberry jam. I took about a tsp. of the jam and added just a little water to the jam. I stirred that mixture and added it to the other ingredients for the cheesecake layer.
Add a little (or big) dab of whipped cream and dig in!
