I can eat a lot of eggs but after a while I do get tired of them! I came across this E breakfast banana bread and that sounded good to me for a change in the breakfast routine! Since I knew I would be making it ahead of time, I knew it would make an easy quick breakfast and well, sometimes you just need that!
E Banana Bread Breakfast by Fay Cadwallader
Ingredients:
- • 3 overly ripe bananas
- • ½ cup applesauce (no sugar added)
- • ¼ cup 0% Greek yogurt
- • 3 egg whites (½ cup)
- • 3 Tbls chia seeds (optional)
- • 1 tsp vanilla extract
- • 2 cups oat flour (or ground up oats)
- • 1/3 cup Truvia
- • 1 Tbls baking powder
- • 1 tsp baking soda •
- 1 tsp sea salt
- • coconut oil (just a little to grease pan)
Mash bananas, add all other ingredients and mix well. Bake at 350 for 50-60 min. Golden brown. 1/6 is a serving.
