Trim Healthy Mama Energizing Breakfast Review

I can eat a lot of eggs but after a while I do get tired of them! I came across this E breakfast banana bread and that sounded good to me for a change in the breakfast routine! Since I knew I would be making it ahead of time, I knew it would make an easy quick breakfast and well, sometimes you just need that!

E Banana Bread Breakfast by Fay Cadwallader

Ingredients:

  • • 3 overly ripe bananas
  • • ½ cup applesauce (no sugar added)
  • • ¼ cup 0% Greek yogurt
  • • 3 egg whites (½ cup)
  • • 3 Tbls chia seeds (optional)
  • • 1 tsp vanilla extract
  • • 2 cups oat flour (or ground up oats)
  • • 1/3 cup Truvia
  • • 1 Tbls baking powder
  • • 1 tsp baking soda •
  • 1 tsp sea salt
  • • coconut oil (just a little to grease pan)

Mash bananas, add all other ingredients and mix well. Bake at 350 for 50-60 min. Golden brown. 1/6 is a serving.
